Styles of Sauvignon Blanc are becoming, happily, more differentiated. Some people love the outrageous green capsicum style, others seek more elegance.
At Neudorf each year we push the boundary to ensure a wine with character and depth, a wine which will age well and which can sit alongside New Zealand’s famous Kai Moana (seafood).
To us summer is freshly shucked oysters and a chilled Sauvignon Blanc.
Many Sauvignon Blancs hold a dollop residual sugar to “reinforce” the concentration, and to balance the high acidity. At Neudorf we prefer our Sauvignon to be dry, with concentration and length reflecting our low cropping rates, and a degree of mid palate texture and creaminess from a portion of (neutral) barrel ferment.
We also tend to release our Sauvignon late…the 08 was released on February 1st 2009…this gives the wine time to soften and evolve.
